Soup Ideas from Kathy
Move over, salad, it’s time for some nice, warm soup. My fall soup ideas!
There’s a chill in the air some mornings, Labour Day has come and gone, and with the fall come ideas for soup to take over for the salads of summer. I’m sharing some of my favourite soups with lots of optional things you can add (or not). These are not detailed recipes but rather creative ideas with great potential! Feel free to use these ideas to come up with your own new soups to enjoy in the colder weather.
Yam Puree
- 1 Yam, peeled and cubed
- 2 to 3 cups Chicken soup stock or Chicken bone broth
- 1 to 2 cloves of Garlic, grated¼ to ½ teaspoon unrefined sea salt
- Simmer until yam is soft, then puree.
- Add vegetables: green like broccoli, green beans or bok choy
- Add protein: leftover cooked chicken or turkey, cooked meatballs, etc.
- Enjoy!
Potato Leek
- 2 cups chicken stock
- 2 redskin* potatoes cubed
- 1 large leek – cleaned and sliced¼ to ½ teaspoon
- unrefined sea salt
- Cook until tender and puree.
- Made this way the potato leek soup does not need dairy.
Vegetable Puree with Curry
- 3 cups cubed butternut squash or yam
- 3 celery stalks sliced
- 1 onion sliced
- 2 carrots sliced
- 3 cups Chicken broth
- Optional: ½ apple to lighten up the flavor of the root vegetables
- 1 Tablespoon curry powder or dried herb like parsley
- Cook together until tender and puree
Soup in a Hurry
Start with Taste Adventure brand dried Curry Lentil or Split Pea soup from the health food store. You can choose other dry soup mixes, but I definitely recommend Taste Adventure.
- Boil 1 Cup of water in a pot
- Add sliced Jerusalem artichoke (they take 10 minutes to soften)
- Add diced onion and carrot (they need less time to soften)
- Once the vegetables are soft, add either of the dried soup mixes in (about ½ to 1 cup of the dried mixture).
- Simmer for 3 to 5 minutes.
- These soups have lots of flavor and are much faster than starting from dried legumes.
